5 Popcorn Recipes That Will Pop Your Socks Off

Popcorn- myohmyitsrhy

Have you ever smelled burnt popcorn? Some undeniably say that burnt popcorn is the worst smell. I agreed until my roommate brought home a Kroger clearance bin coconut… it went bad the next day. That is undeniably the WORST smell. If you haven’t smelled a rotten coconut just take my word for it. We could have cleaned them out and made bowls out of them. I’ve seen those and they look pretty cool, the smell was just too bad for that.

I’ve been trying to become more eco-friendly, I even bought a reusable kernel popper. It works like a charm! One time I burnt the bejeezus out of it, it’s durable enough to withstand the damage of fire —a major plus. Lesson learned: don’t leave your popper unattended.

I am a chronic snacker like I love snacks. Popcorn is a whole grain which is one of the reasons why it is a great snack option. Now if I’m going to eat popcorn plain just doesn’t cut it. I’ve phoned a few friends who have come up with recipes that make plain popcorn taste even better.

  • zest of ½ lemon
  • juice of ¼ lemon
  • ½ tsp finely chopped fresh thyme
  • ¼ tsp avocado oil
  • ¼ cup uncooked popcorn kernels
  • salt and pepper (to taste)

1. Combine the popcorn, thyme, avocado oil, salt, pepper, lemon zest, and lemon juice in a microwave air popper.
2. Microwave popcorn for about 3 min 30 seconds. Once the popping slows down, carefully remove from microwave.
3. Enjoy!

Optional: serve with extra lemon juice squeezed on top!
*Your microwave could take less time. Pay close attention to the pops- better to have a few unpopped kernels than a bunch of burnt/inedible ones.
