BUDGET & BELT FRIENDLY GUACAMOLE

“Guac is extra, but don’t worry so I am” Avocados not only taste good but are a great source of fiber and potassium. Their creamy texture is perfect for smoothies and even desserts. If you’re anything like me, you might like bottomless guac. Today I’m having my guacamole and eating it too. I will be making this again for Cino de Mayo this Saturday! Super Greens Guac has an abundance of my favorite nutrient, fiber. One avocado has 14g of fiber and 1 cup of peas has 7g! Adding peas to guacamole creates a lower fat dish that goes further for less moola. I’m especially looking to save money because…

LIFE UPDATE

We found the cutest apartment in Dallas, Tx! I am so excited to be moving this SUNDAY into our new apartment. We have been looking since January so I’m beyond ecstatic to have finally found a place we both like. Most of the wish list was met with this apartment too.
1. Natural lighting, windows on windows & a balcony
2. An actual Dallas address, none of that suburb stuff.
3. Close to a grocery store. We’ve got Nattie G (Natural Grocer’s) just around the bend.
4. Amenities, a 24-hour fitness center + pool were preferred.
The only thing that they don’t have that was on the wish list was a washer and dryer. But I think we can make work. GF avocado toast will for sure be a weekly thing, it’s just so delicious!

AVO-ALLERGY?

I  never ate avocados, like ever. I went to the doctor years ago because I had rashes on my hands from what was thought to be an allergic reaction. My doctor who had minimal nutritional experience advised me to stay away from a HUGE list of foods, avocados included. I listened for about 2 years thinking I would die from cross-reactivity. Surprise! I wasn’t actually having an allergic reaction to anything at all. after spending mad dollars for allergy testing and medication I was referred to a dermatologist. This was the cheapest and most effective visit. I spent maybe 5 minutes with the doctor and she knew right away what was happening. My “allergic reactions” turned out to be eczema. Although, it was a pain I am grateful to be able to eat all the foods I had avoided for years. & I am still alive with no allergic reactions.

Secret Ingredient Super Greens Guacamole

Ingredients

  • 1 can green peas drained
  • 1 jumbo avocado
  • ½ tsp chili powder
  • 1 tsp cumin
  • 1 Roma tomato diced
  • ½ onion diced
  • 1 jalapeno seeded + minced
  • 2 cloves garlic minced

Instructions

  1. In a blender blend together peas and avocado.
  2. One desired consistency reached add spices, tomato, onion, jalapeno, and garlic.
  3. Mix all together until combined.
