National Grilled Cheese Day a VEGAN Way To Celebrate !


A house favorite. A regular cheese toastie with the addition of veggies. I liked this version the best because it made me feel so fancy. It’s the little things in life. Anyway, I’ve recreated this family classic using romaine lettuce and sliced tomatoes. 

Vegan cheese gets a lot of hate… I am now aware of why people hate vegan cheese. Usually, I don’t mind vegan cheese. I typically go with Your Heart or Chao. I  made a bad, bad mistake at the grocery and bought Daiya slices because they were on saleI didn’t think anything of it until I opened and tasted it … Vegan Tip: if you find a cheese you like STICK WITH THAT BRAND.

As you can see from the photos the cheese didn’t melt! Not even in the slightest bit. Not only is it not melted, the taste was off, like worse than kraft slices. 


What is this grilled cheese you speak of? It’s called a freaking cheese toastie, dang it. My family is without a doubt weird, but we have been calling it a cheese toastie since forever. Maybe it’s a midwest thing. National “Grilled Cheese Day” may be my favorite day of the year. Grilled Cheese is a complete comfort food to me. Every time I eat one I think of home. Growing up, cheese toasties were a staple in my house. They were on the menu at least once a week with good ole’ fashion tomato juice. The best way to eat a cheese toastie is to dip it into the tomato juice. It may seem odd, but that would be so tasty!



When making anything with grains I always try to choose a whole grain option.  A whole grain, unlike refined grains, still have the bran, germ, and endosperm. Refined grains are missing the germ and bran. Only the endosperm is left in refined grains. The bran layer is full of fiber, the germ is rich in nutrients, and the endosperm has little nutritional value. Examples of whole grains are brown rice, quinoa, barley, oats, or whole-grain pasta, bread and cereals. Half your daily grains should be whole grains. Use caution when choosing multi-grain, stone-ground, 100% wheat, they aren’t always whole grains. 

Bonus tip: whole grains have selenium which helps your immune system fight off bad guys.



Vegan Cheese Toastie


  • 2 slices whole grain bread
  • 2 slices vegan cheese
  • 1 tbsp vegan butter
  • sliced tomato
  • Leaf of romaine lettuce


  1. Grab 2 pieces of bread and lather one side with butter.
  2. Place 1 slice of bread butter side down in a warm skillet. Stack the rest of the ingredients on top making sure the other piece of bread is butter side up.
  3. Cook on each side for about 2 minutes or until golden brown.
  4. *if you don't use crappy cheese it will melt and be delicious

Ps. I’m not hating on Daiya, I love all their other products, just not the slices of cheddar cheese.
