MINT to be Black Bean Brownies, Come Back for Seconds

CELEBRATION

I am so excited because… I’m done with my Dietetic Internship! 1200+ supervised hours are under my belt. The hardest 1200+ hours of my life, but I am so excited to be one step closer to becoming a dietitian. One week from today I will start my new adventure in Dallas, Texas. A big change but full of unknown excitement, did I mention they have a CYCLEBAR? I think this calls for a celebration. Not just any celebration, a celebration with brownies, mint black bean brownies. *I picked mint because I’m MINT to be an RD.

To celebrate the end of rotations with my fellow interns a few of us packed up and hit the beach. We left happy, sunburnt + salty. The “sunset” was amazing!

DKY ABOUT MINT 

Not only does mint taste and smell good, it has great health benefits. Peppermint oil has been linked to reducing stomach upsets. Consuming mint in any form like brownies, or tea when feeling sick may improve stomach issues. Mint also has antioxidant properties, specifically vitamin A. Not only does vitamin A have antioxidant properties it also is great for eye health. Keep those eyes healthy so you can continue to see the beautiful world. 

BLACK BEANS

Black beans are one of my favorite beans. I love the idea of using beans as the “flour” in recipes. It adds fiber and antioxidants! Black beans are a major game changer in this recipe. The brownies taste nothing like black beans, in fact, they taste just like regular brownies. You could actually fool your friends and family with these are your next gathering. Make sure you rinse them off well once you open the can. Rinsing them reduces the black bean flavor. Trust me just do it. 

 

MINT to be Black Bean Brownies, Come Back for Seconds

Brownies that are MINT for you.

Cook Time 15 minutes

Ingredients

  • 1 15- oz can black beans drained and rinsed
  • 2 Tbsp cocoa powder
  • ¼ cup canola oil
  • ½ cup gluten-free oats
  • Pinch of salt
  • ¼ cup + 2 Tbsp agave
  • ½ - 1 tsp mint extract ½ is subtle, 1 tsp is minty goodness!
  • ½ tsp baking powder
  • ¾ - ½ cup dark chocolate chips + more for topping.

Instructions

  1. Preheat oven to 350F.
  2. Add all ingredients EXCEPT chocolate chips into a food processor or high-speed blender.
  3. Blend together until smooth. One smooth stir chocolate chips into batter.
  4. Fill a mini muffin tin with batter, add chocolate chips on top for a real chocolatey flavor.
  5. Bake at 350F for 15 minutes or until toothpick comes out clean.
