Easter Brunch Carrot Cake Smoothie Tastes Like Cake

 

HOPPY EASTER

When I was younger I made resurrection cake with my grandma for Easter celebration. Resurrection cake gets “trapped” in the oven for a few days. On Easter morning the cake is taken out of the oven and has magically risen! like Jesus. Staying away from politics and religion with Easter’s mascot, the Easter Bunny. Plus, who didn’t love the Easter Bunny as a kid? The best part of Easter was egg hunting. Man is the Easter Bunny good at hiding eggs or what. The best part was discovering the surprise inside secretly hoping for a $5 bill, wasn’t really there for candy. How did the Easter Bunny become Easter’s mascot. A question I ponder every year. According to a Time Magazine theory, the cute little bunny came to America with German immigrants in the 1700s. That’s just a theory, who really knows.

CARROTS

Is it really Easter without something carrot flavored? Technically, yes, but I can’t bring up Easter and not mention something about carrots. Carrots, also know as bunny bait are a popular vegetable during Easter, everyone knows a bunny’s favorite food is a carrot. No worries, bunny bait isn’t for trapping the Easter Bunny, just a reminder to stop by. Instead of using carrots to make a traditional carrot cake, I’m using carrots to make a carrot cake smoothie. I sure hope the  Easter bunny stops by my house. I sure do miss him! 

Nutrition

A carrot cake smoothie is more nutrient dense than a carrot cake. Both recipes use carrots, but the cake has added sugar and other goodies. A carrot cake smoothie isn’t exactly cake but the dates and agave nectar sweeten the smoothie up. DKY carrots are a root vegetable that has beta carotene, vitamin K, and fiber. Check out the recipe below to make yourself a delicious Easter inspired smoothie. 

Carrot Cake Smoothie That Tastes Like Cake Perfect for Easter Brunch

Servings 1

Ingredients

  • 2 carrots
  • 1 cup almond milk
  • 4 dates
  • 1 Tbsp Agave
  • 10 walnut halves
  • 1 tsp cinnamon
  • 1 shake nutmeg

Instructions

  1. Add all ingredients to a blender and blend until smooth.
