Three cheers for everyone who survived their first week of school. Sadly, I’m not in school anymore. I went to school for 17 years, now it’s weird not being in that environment. I’m jealous that Zach goes to school. I don’t know much about his program or even what Ph.D. stands for, but from what I’ve gathered it’s hard and I have zero idea about anything else. What I do know is that he needs to stay fueled to get his work done and I need to stay fueled for my Netflix benders. These back to school breakfast bites are great for a quick, easy grab-and-go breakfast and perfect for eating in bed.
Back to School Breakfast Bites
quick and easy to grab & go healthy breakfast
- 1 cup gluten-free oats
- ¼ cup dark chocolate chips
- 2 flax eggs 2 Tbps flax seed + 5 Tbsp filtered water mix together and set aside for ~15 minutes
- ⅓ cup natural peanut butter
- 3 ½ Tbsp nut milk
- 1 small banana mashed
Preheat oven to 350 F
In a medium-size bowl mix together oats and chocolate chips and set aside. Using a separate bowl add peanut butter, nut milk, banana, and flax egg.
Incorporate wet ingredients into dry making sure mixed well and chocolate chips are evenly distributed.
Pour mixture into greased mini muffin tin. Bake for 15 minutes, or until golden brown.
If you use a small pan instead of a muffin tin let the bites cool before cutting into bars.
